Recipes   :   Rice Dishes   :   Zafarani veg biryani


Ingredients
      
basmati rice- 2 cups
french beans(sliced): 12 carrots(sliced): 3 cauliflowerts: 12-15 potatoes(peeled n slice): 2 onoins (peeled n slice)
green peas- 1 cup
cardomoms:3
cloves:2
bay leaves: 3
curd: 1 cup
garam masala: 1 tsp
chilli ginger pare: 1 tsp
red chilli powder: 1 tsp
pure ghee: 3-4 tbsp
A few strands of safforon
onion sliced n deep fried: 1
mint leaves chopped: 2 tbsp
                
Method
          
wash n soak the rice for abt half n hour,
take a large pan, boil water in it add cardomoms, clove n bay leaves. then add rice, boil the rice intil cooked
each grain of rice should be seprate
hence avoid overcooking, drain and keep it aside
heat ghee and stir fry all vegetables until cooked, drain excess ghee and keep it aside. take pan heat the ghee add chilli ginger pasteand stir fry, add curd and cooked vegetables. add garam masala, red chilli powder and salt. cook on low fame.
take a flat pan, spread the rice layer, then spread vegetable layer on it, reapeat this, dissolve the safforn n sprinkle over the top layer of rice, garnish with fried onions and mint leaves. seal the pan and place over tava and cook on low flame for ten min. Serve hot with Raitha.
