Ingredients
      
Long grain rice - 4 cups
Yeast - 1 tsp
Grated coconut - 1/2 cup
Sugar - 2 tsp
Salt to taste
                
Method
          
Soak rice for about 5 hours. Then in a blender grind rice, coconut, sugar and salt to a paste. Then add the yeast to the mixture and let it ferment and rise. In about 2-3 hours the dough is ready.
Then warm a deep heavy pan, coat it with oil and pour 1/2 cup of the dough into it. Quickly swirl it around to coat the pan. The center will have more dough while the sides would be just coated with a thin layer of dough. Cover with a lid and cook until the middle is done and sides leave the pan, approximately 3-5 minutes. Serve with coconut milk and sugar or checken stew.
